And healthy too! It’s supposed to be 72 degrees later this week, and I am going to be the only one prepared. I know how to be the popular Mom on the street. I got it covered.
These are Greek yogurt Berry Popsicles. And there you have it… You take your popsicle molds, and jam some big, fat, wonderful berries down into the bottom (I used raspberries and black berries), and then stuff some greek yogurt laced with stevia in around the berries, and keep alternating until you get to the top. The mixture is so thick you don’t even have to wait until it hardens to insert the sticks.
It has always been my pet peeve that any time I tried to make healthy popsicles from different fruits and their juices, the popsicles turned into ice cubes, not that wonderful crumbly texture you get from the sugar on a stick from the grocery store. But these are awesome. They might be harder if I could have waited longer than half a day to eat one, but it just wasn’t going to happen.
